Ingredients
  1. • Chicken 1 (whole with skin)
  2. • Ginger 1 piece
  3. • Garlic 4 – 5 cloves
  4. • Olive oil 4 tbsp
  5. • Onion 1 (chopped)
  6. • Green and red grapes 250 gm
  7. • Salt to taste
  8. • Black pepper 1 tsp (crushed)
  9. • Spring onion 2 (chopped)
  10. • Capsicum 1 (chopped)
  11. • Black pepper powder 1 tsp
  12. • Lemon juice 2 tbsp
  13. • Corn flour paste 1 tbsp
  14. • Cinnamon powder ½ tsp
  15. • Parsley ¼ bunch (chopped)
Method
  • 1. Finely chop ginger and garlic.
  • 2. Heat olive oil in a pan, add chopped ginger garlic and chopped onion.
  • 3. Fry well till onion is tender.
  • 4. Now add grapes. Cook for 2 – 3 minutes.
  • 5. Then add salt, crushed black pepper, spring onion leaves and capsicum.
  • 6. Fry well for 1 – 2 minutes.
  • 7. Stuff half of the prepared mixture in whole chicken.
  • 8. Marinate whole chicken with a little salt, black pepper powder and lemon juice.
  • 9. Also brush with a little oil.
  • 10. Now put stuffed chicken in a greased pan, cook till its color turn to golden brown.
  • 11. Remove from pan and put chicken in an oven proof tray.
  • 12. Add 1 glass of water and roast on 180 degrees for 25 – 30 minutes.
  • 13. Remove chicken and keep aside, mix the remaining gravy with remaining grapes mixture.
  • 14. Fry well on high flame.
  • 15. Then add corn flour paste and parsley. Turn the flame off.
  • 16. Cut chicken into pieces, pour prepared sauce on top and serve hot.
